Safe Handling of Beef
- Follow the safe handling instructions on your processor's package labels.
- Keep beef frozen or refrigerated. Thaw in the refrigerator, not at room temperature.
- Keep raw meat separate from other foods and wash hands, surfaces, and utensils after handling.
- Cook beef to safe internal temperatures as recommended by the USDA.
USDA and Custom Processing
Our beef is processed and vacuum sealed at a USDA-inspected facility. On Whole and Half cut sheets, customers may select USDA or Custom processing; if not specified, USDA processing and pricing apply. Custom-processed beef is for the owner's own use, is labeled accordingly by the processor, and may not be resold.
Weights and Yields
Hanging weights, packaged weights, and included cuts are estimates and vary by animal. The Quarter "Quasa Way" assortment is subject to normal yield and availability.
Tallow Products
Whipped tallow and tallow moisturizer are intended for external use on skin only. Do not eat. Test on a small area first and stop use if irritation occurs. These products are not intended to diagnose, treat, cure, or prevent any disease. Cooking tallow is a food product: store as directed and follow normal food handling practices.
